It is also a very good source of manganese, potassium, magnesium, folate, copper, and zinc, and B vitamins, vitamin A, C, E and K.

Benefits: Washing and soaking mung bean removes a lot of pesticides, dirt and other impurities which eventually enhances the flavor. Sprouted moong flour is very easy to digest, phytic acid can combine with calcium, magnesium, copper, iron and especially zinc in the intestinal tract and block their absorption. Sprouting decrease phytic acid which means your body will absorb more minerals like calcium, iron, zinc, copper and magnesium. Sprouted grains contain less gluten, which is a bonus for those who are gluten-sensitive. While not gluten free, it can be easier for slightly gluten-sensitive individuals to eat.
The process of sprouting breaks down the enzyme inhibitors present in the green gram, making it much easier for the body to digest and absorb the nutrients. Sprouting also increases the nutritional content and makes it more bioactive. The superior nutritional value accumulated during sprouting is retained after drying and cold-milling into flour. Our air-cooled cold-milling process finely grinds the entire mung bean including the outer seed coating and the sprout without generating heat, thus retaining all the nutrients, while giving a smooth texture.

Direction for use: The sprouted green gram flour can be added to soups, and curries as a thickening agent and to improve the protein content. It can also be used to make dosa and pancakes, as well as, chapathies and poori by mixing with Dhatu Sprouted Wheat Flour. Sweets such as Sprouted Mung Halwa can also be prepared.
